Eggplant Fritters

Ingredients
  Eggs 2 , beaten
  Buttermilk 1 Cup (16 tbs)
  Salt 1 Teaspoon
  Soda 1⁄2 Teaspoon
  Baking powder 2 Teaspoon
  Flour 7 1⁄2 Cup (120 tbs)
  Cornmeal 4 Tablespoon
  Peeled eggplant 1 Medium, cubed
  Oil 1 1⁄2 Cup (24 tbs) (for deep frying)
Directions

Combine eggs, buttermilk and dry ingredients, mix- ing well.
Fold eggplant cubes into batter.
Drop by large spoonfuls into hot deep oil in skillet.
Fry until lightly browned on both sides.
Drain well on paper toweling; serve immediately.
