Clam Fritters With Tomato Sauce
|All purpose flour||2 Cup (32 tbs)|
|Baking powder||2 Teaspoon|
|Canned minced clams||10 1⁄2 Ounce (1 Can)|
|Milk||4 Tablespoon (Adjust Quantity As Needed)|
|Eggs||2 , well beaten|
|Melted butter/Margarine||1 Tablespoon|
|Fat||1 Tablespoon (For Deep Frying)|
|Tomato sauce||8 Ounce (1 Can)|
|Lemon||1 , juiced|
Sift dry ingredients together.
Drain broth from clams into measuring cup and add enough milk to make 3/4 cup.
Add to eggs; stir into flour mixture and beat thoroughly.
Add clams and butter.
Drop by spoonfuls into hot deep fat (375°F. on frying thermometer) and fry until golden brown.
Serve with tomato sauce heated with remaining ingredients.
Makes 4 servings.
