|Ripe bananas||3 Large|
|Lemon juice||1 Tablespoon|
|Salad oil/Shortening||2 Cup (32 tbs)|
|Confectionery sugar||2 Tablespoon|
|Frozen sliced strawberries/Caramel sauce||4 Ounce, thawed|
Make Basic Sweet Batter.
Peel 3 large, not overly ripe bananas; slice on diagonal into 1/2-inch chunks.
Sprinkle lightly with lemon juice (1 tablespoon in all) and nutmeg (1/2 teaspoon in all).
Meanwhile, in deep skillet or deep-fat fryer, slowly heat salad oil or shortening (at least 2 inches) to 375F on deep-frying thermometer.
Roll banana chunks in flour; shake off excess.
Then, with fingers, dip into batter, coating evenly.
Deep-fry a few at a time, turning once, 3 to 4 minutes, or until golden-brown on both sides.
Drain on paper towels.
Serve hot, sprinkled with confectioners' sugar, along with slightly thawed frozen sliced straw- berries, or with Caramel Sauce, .
