Fruit Fritters

Ingredients
  Batter 1⁄2 Cup (8 tbs)
  Fritter batter 1⁄2 Cup (8 tbs)
  Corn oil 2 Cup (32 tbs) (For deep frying)
  Pineapple rings 1 1⁄4 Pound, canned
  Canned peach halves/Pineapple rings/1 1/2 pounds bananas/3 cooking apples 1 1⁄4 Pound
  Egg white 1
  Superfine sugar 1 Tablespoon
Directions

GETTING READY
1 Prepare the basic ritter batter and let it stand.
2 Fill a deep fryer half way up with corn oil and allow it to heat slowely at 375 degrees farenheit.
3 In the meanwhile drain the canned pineapples and peaches and dry them on paper towels.
4 Also peel and cut the bananas in to 3 or 4 diagonal chunks. Peel,core and cut the apples into 1/2 inch thick slices.

MAKING
5 In a bowl beat the egg white until stiff but not dry and fold in to the prepared basic fritter batter.
6 Dip the desired food in the batter allowing excess to drain off and fry in hot oil for 2-3 minutes turning the fruit while cooking.
7 Fry only a few at a time.

SERVING
8 Dredge the fritters with superfine sugar before serving

TIP
Keep the fried fritters warm placing them in the oven at 300 degrees farenheit untill all af them are cooked.
