Courgette Fritters

Ingredients
  Plain flour 5 Ounce
  Eggs 2
  Milk 6 Fluid Ounce (175 Milliliter)
  Cheddar 2 Ounce, crumbled
  Chives bunch 1⁄2 Bunch (50 gm), snipped
  Courgettes 2 , grated
  Olive oil 1 Teaspoon
Directions

GETTING READY
1. Preheat your oven to 200C/fan 180C/gas 6

MAKING
2. In a bowl, add in the flour, season it nad slowly add in the eggs and milk; combine well to make a smooth batter
3. Add cheese and half of the chives and stir well
4. In a nonstick frying pan, cook the courgette over high heat until just soft; add into a kitchen ad squeeze dry and then add to the batter
5. Oil a pan, add small ladlefuls of the batter and cook for a couple of minutes on either sides until golden
6. Do the same till you have twelve fritters; add them to the baking tray and cook for another eight minutes

SERVING
7. Serve with tomato an spinach salad
