1)Mix corn kernels, onion, chopped coriander leaves, a pinch of cayenne pepper and salt.
2)Heat oil in a deep frying pan on a medium high flame or in a deep fat fryer.
3)Drop spoonfuls of mixture, in batches and fry till crisp and golden brown.
4)Use a slotted spoon to remove and drain fritters on a kitchen paper.
5)Serve hot and crisp as a side dish with fried chicken or as a cocktail snack.
