Crispy Pineapple Fritters
|Castor sugar||1⁄2 Cup (8 tbs)|
|Frying oil||2 Cup (32 tbs)|
|Warm water||1 Cup (16 tbs)|
|Baking powder||1 Tablespoon|
Beat all batter ingredients together, except the baking powder, with a rotary whisk, leave for an hour in a cool place, then add baking powder just before using batter.
Dry rings on kitchen paper, dip each into batter and drop into pan of hot oil.
Fry until the batter is gol- den brown and the fritters are cooked on both sides.
Drain well and toss in castor sugar before serving.
These will not keep crisp for long, as the juice from the fruit will penetrate the batter and make it soggy
