Clam Fritters

Ingredients
  Beaten egg yolks 2 , well beaten
  Milk 1⁄2 Cup (8 tbs)
  Canned minced clams 15 Ounce, drained (2 Can, 7 1/2 Ounce Each)
  Fine dry bread crumbs 1 Cup (16 tbs)
  Snipped parsley 2 Teaspoon
  Salt 1 Teaspoon
  Pepper 1⁄2 Teaspoon
  Stiffly beaten egg whites 2
  Cooking oil 1 Cup (16 tbs)
Directions

Combine beaten egg yolks, milk, clams, bread crumbs, parsley, salt, and pepper.
Fold in stiffly beaten egg whites.
Drop batter from a tablespoon into skillet containing 1/4 inch hot oil.
Fry, turning once.
Garnish with orange slices, if desired.
