Banana Fritters

Ingredients
  Bananas 4
  Lemon juice 1 Tablespoon
  Powdered sugar 2 Tablespoon
  Egg 1 , separated
  Melted butter/Margarine / fat / salad oil 1 Tablespoon
  Salt 1⁄4 Teaspoon
  Milk/1/4 cup evaporated milk and 1/4 cup water mixed together 1⁄2 Cup (8 tbs) (Bottled Milk)
  Sifted all purpose flour 1⁄2 Cup (8 tbs)
  Granulated sugar 1 Tablespoon
Directions

Peel the bananas and cut in halves crosswise.
Cut each half in two, lengthwise if desired.
Sprinkle with the lemon juice and powdered sugar; let stand 20-30 min.; drain.
Meanwhile beat the egg yolk; add the butter, salt, and 1/4 c of the milk.
Add the flour and sugar, and stir until smooth; then add the remaining 1/2 c milk and fold in the stiffly beaten egg white.
Dip each piece of banana in the fritter batter, and deep fry for 2 min or until golden brown in deep fat or salad oil heated to 375ยบ F., or hot enough to brown a day-old cube of bread in 40 sec, turning frequently.
