Spicy Courgette Fritters

Ingredients
  Courgettes 1 Pound, grated (500 Grams)
  Egg 1 , beaten
  Plain flour 2 Tablespoon
  Chili 1 , deseeded and chopped
  Garlic 1 Clove (5 gm), crushed
  Cheddar cheese 3 Ounce, grated (75 Gram)
  Dill sprigs 3 , garnish (To Garnish)
  Smoked salmon 2 (To Serve)
  Cream cheese 2 Tablespoon (To Serve)
  Salt To Taste
  Pepper To Taste
Directions

Heat a griddle pan until hot.
Meanwhile, squeeze the excess moisture out of the grated courgettes; the easiest way to do this is to place all the courgettes in a clean tea towel and squeeze well.
Mix together the egg and flour until smooth.
Add all the other ingredients, mix well and season to taste.
Place spoonfuls of the mixture on to the griddle, flatten with a palette knife and allow the fritters to cook for 4-5 minutes.
Turn and cook for a further 4-5 minutes.
Do not disturb them while they are cooking because a crust needs to form on the cooking side, otherwise the fritter will be difficult to turn.
Keep the cooked fritters warm and repeat until all the mixture has been used.
Serve the fritters garnished with sprigs of dill and between layers of smoked salmon and cream cheese.
