Low Carb Healthy Cauliflower Fritters

These really remind me of potato pancakes, my favorite breakfast treat. Quick and easy to make.
Ingredients
  Cauliflower head 1 , steamed
  Baking powder 1 Teaspoon
  Whole wheat flour 2 Tablespoon
  Eggs 2
  Chopped parsley 1⁄4 Cup (4 tbs)
  Finely chopped onions 1⁄4 Cup (4 tbs)
  Garlic 2 Clove (10 gm), chopped
  Parmesan 2 Tablespoon
Directions

Steam cauliflower for about 15 mins
Mash cauliflower with a potato masher
Add onions
Add garlic
Add Parsley
Add Parmesan cheese
Add baking powder
Add whole wheat flour
Add Black pepper and salt
Mix ingredients together
Take a heaping teaspoon and flatten in the palm of hand to form a patty
Add oil to pan and pan fry for 4 minutes each side or until golden brown
Eat with apple sauce or sour cream. Enjoy!
