Broiled Flounder Fromage
|Flounder fillets||1 1⁄2 Pound|
|Freshly ground black pepper||To Taste|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Shredded swiss cheese||1⁄2 Cup (8 tbs)|
|Cayenne pepper||1 Dash|
Sprinkle fish with salt and pepper. Place fillets on broiler pan and broil 4" from flame for about 10 minutes.
Mix mayonnaise, cheese, and cayenne together.
Beat egg white until stiff and fold into cheese mixture.
Spread cheese mixture on fish and return to the broiler until puffed and lightly browned. Sprinkle with fresh
