|Castor sugar||1 Ounce|
|Ground almonds||2 Ounce|
Beat the egg yolks and the sugar together until thick and creamy.
Stiffly whisk the egg whites.
Stir the cornflour, almonds and vanilla essence into the creamed yolks and sugar.
Lightly stir in the egg whites.
Drop the mixture in tea-spoonfuls into frying fat (which is just beginning to haze and which is at least 1 in in depth).
Fry until golden brown underneath.
Turn, and when cooked on the other side drain well.
Dredge with castor sugar and serve at once.
