Deep Fried Banana Fritter

Ingredients
  Firm bananas 4
  Batter 1 Cup (16 tbs) (For Coating)
  Fat 2 Cup (32 tbs) (For Frying)
  Sugar 6 Tablespoon
Directions

Prepare the batter.
Cut each banana lengthwise and across the middle, making four portions.
Coat with batter.
Fry in hot fat, which is just beginning to haze.
Sprinkle well with castor sugar and serve immediately.
Orange Fritters: Remove peel and pith from 4 oranges; divide these into pieces of 3—4 segments.
Carefully cut into centre to remove pips.
Dip into batter and fry as above.
Pineapple Fritters: Use canned pineapple rings; drain well, dip into batter and fry as above.
Serve with pineapple sauce made from the syrup.
