|Biscuit mix||1⁄3 Cup (5.33 tbs) (Packaged)|
|Grated parmesan||1⁄4 Cup (4 tbs)|
|Eggs||2 , slightly beaten|
|Shredded unpeeled zucchini||2 Cup (32 tbs)|
In bowl stir together biscuit mix, Parmesan cheese, and pepper.
Stir in beaten eggs just till mixture is moistened.
Fold in zucchini.
In large heavy skillet or griddle melt butter over medium-hot coals.
Using 2 tablespoons mixture for each fritter, cook four at a time till browned, 4 to 5 minutes on each side.
Keep warm while cooking remaining zucchini fritters.
