|Light cream||2⁄3 Cup (10.67 tbs), scalded and cooled|
|Hard cooked eggs||12 , chopped|
|Grated onion||1 Tablespoon|
|Finely snipped parsley||2 Teaspoon|
|Oil/Shortening||2 Cup (32 tbs) (For Deep Frying)|
Sift flour, baking powder, and salt into a bowl.
Beat whole egg, yolk, and cream together.
Beat in flour mixture gradually, stirring until smooth.
Stir in chopped eggs, onion, parsley, and seasonings; mix gently.
Let stand 5 minutes.
Drop from a teaspoon into 1 inch of hot oil.
Fry until golden on both sides.
