Fruit Fritters

Ingredients
  All purpose flour 1 Cup (16 tbs), sifted
  Cinnamon 1
  Fat 1 (for frying)
  Melted butter 1 Tablespoon
  Fresh lemon juice 1 Teaspoon
  Salt 1⁄4 Teaspoon
  Sugar 2 Tablespoon
  Fruit 2 Cup (32 tbs), cubed
  Eggs 2 , separated
  Milk 2⁄3 Cup (10.67 tbs)
Directions

Sift together the flour, salt, and sugar.
Set aside.
Combine egg yolks and milk, then beat in butter and lemon juice.
Stir in flour mixture with as few strokes as possible and gently fold in stiffly beaten egg whites.
If you use canned fruit, drain on paper towels.
Heat deep fat to 350° or until a 1 inch cube of bread browns in 60 seconds.
Drop a piece of fruit into batter, drain slightly, and fry in hot fat until golden brown on each side.
Drain on paper towels and sprinkle with a mixture of granulated sugar and a little cinnamon.
