Assorted Vegetable Fritters
|Oil||2 Cup (32 tbs) (for deep frying)|
|Fritter batter||2 Cup (32 tbs)|
|Zucchini||1 , cut into 1/4 inch slices|
|Cauliflower||1 Small, separated into florets|
Thinly slice eggplant; dip into batter one slice at a time.
Drop several at a time into hot (370Â°F) oil in deep fat fryer; brown on one side.
Turn; brown other side.
Remove with slotted spoon; drain on paper toweling.
Place on ovenproof platter; keep warm until zucchini and cauliflower are cooked in same manner. (These can also be served for hors d'oeuvres.)
