Assorted Vegetable Fritters

Ingredients
  Eggplant 1 Small
  Oil 2 Cup (32 tbs) (for deep frying)
  Fritter batter 2 Cup (32 tbs)
  Zucchini 1 , cut into 1/4 inch slices
  Cauliflower 1 Small, separated into florets
Directions

Thinly slice eggplant; dip into batter one slice at a time.
Drop several at a time into hot (370°F) oil in deep fat fryer; brown on one side.
Turn; brown other side.
Remove with slotted spoon; drain on paper toweling.
Place on ovenproof platter; keep warm until zucchini and cauliflower are cooked in same manner. (These can also be served for hors d'oeuvres.)
