  Idaho potatoes 4 , scrubbed (unpeeled)
  Olive oil 1⁄2 Cup (8 tbs)
  Garlic 8 Clove (40 gm), sliced
  Onions 2 Medium, thinly sliced

Cut the potatoes into 1/4-inch rounds.
In a large skillet over medium heat, heat the olive oil and saute the potatoes, garlic, and onions until the potatoes are done through and golden brown, about 30 minutes.

Do NOT put in garlic and onions until potatoes have been cooking for at least 10 to 15 mins. I tried all sorts of different pans and at 30 mins for the recipe...the onions and garlic start burning at about 15 mins or so. And it wont help to turn the heat down because your potatoes wont hurt thru. But even though the garlic and onions burned again...they are tasty. Just had alot of picking out burn onions. LOL

Niffer try a non-stick skillet. Also after the onions and garlic is softened and caramelized, add potatoes and a bit of water. Cook covered, sauteing after every 5 minutes or so. If you put the onion and garlic after potatoes are cooked, they will remain uncooked and lend a rather odd taste to the potatoes.
