Cheese And Tomato Fries

Ingredients
12 slices of white bread
Butter or soft margarine
Dijon mustard
12 oz Edam cheese, thinly sliced
8 oz tomatoes, skinned and thinly sliced
Salt
Freshly ground black pepper
Oil and butter for frying
Watercress to garnish
Directions

Spread the slices of bread with butter or margarine and mustard. Make six cheese and tomato sandwiches, placing the tomatoes in the centre with plenty of seasoning. Press well together. Cut off the
crusts and cut each sandwich into triangles. Shallow fry quickly in mixed hot oil and butter until golden brown on both sides and the cheese starts to ooze. Serve as soon as possible, garnished with watercress.
