Potato Souffle

Ingredients
  Hot mashed potatoes 3 Cup (48 tbs)
  Butter/Margarine 2 Tablespoon
  Chopped onion 2 Tablespoon
  Chopped parsley 2 Teaspoon
  Cayenne 1⁄8 Teaspoon
  Salt 1 Teaspoon
  Eggs 3
Directions

Combine potatoes, butter, onion, parsley, cayenne, and salt.
Separate eggs.
Beat yolks; add to mixture, mixing thoroughly.
Beat egg whites stiff; fold into mixture.
Put in greased baking dish; set in pan of water.
Bake in 350°F oven 50 to 60 minutes.
