French Or Jelly Pancakes

Ingredients
  Eggs 3 , separated
  Sugar 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Milk 1 Cup (16 tbs)
  Sifted flour 1⁄2 Cup (8 tbs)
  Shortening 1 Tablespoon, melted
  Tart fruit jelly 1 Tablespoon (As Required)
Directions

MAKING
1.In a bowl, beat in egg yolks and add sugar, salt and ½ cup milk
2.Also add flour and shortening and mix until mixture turns smooth, then add remaining milk
3.Now fold in stiffly beaten egg whites
4.Finally place the mixture on a griddle, and bake it
5.Once baked completely, remove from the griddle
6.Spread jelly on top of the cake and also roll up while its hot

SERVING
7.Serve with overlapping edges of cakes on bottom to keep them from unrolling

Tips
Baking in a griddle is preferred, because it makes the cake larger than usual and also very thin
Sprinkle with confectioners' sugar if desired
