French Strawberry Pie
|9 inch pie shell||1 , baked|
|Cream cheese||3 Ounce (1 Package)|
|Sugar||1 Cup (16 tbs)|
|Whipped cream||1 Cup (16 tbs)|
|Lemon juice||4 Drop|
Blend the cream cheese and cream until soft and smooth.
Spread over the cooled pie shell.
Wash and hull the berries.
Select one half of the best ones.
If they are large, slice in half.
Add sugar to the rest and let stand until juicy.
Mash and rub through a sieve.
Mix this puree with the cornstarch.
Add a few drops of lemon juice.
Cook this mixture until thick and transparent, stirring constantly.
Cool and put half over the cream cheese.
Arrange the berries in the sauce then pour the remaining puree over the berries and chill.
Top with sweetened whipped cream.
