Seafood Au Gratin

  Chopped onions 1 Cup (16 tbs)
  Finely chopped celery 1⁄2 Cup (8 tbs)
  Butter/Margarine 1⁄4 Cup (4 tbs)
  All purpose flour 1⁄4 Cup (4 tbs)
  Evaporated milk 13 Ounce (1 Can)
  Salt 1⁄2 Teaspoon
  Black pepper 1⁄4 Teaspoon
  Cayenne pepper 1 Dash
  Grated cheddar cheese 1 1⁄2 Cup (24 tbs)
  Cooked shrimp 1 Pound, peeled and deveined
  Frozen crabmeat 12 Ounce, thawed (2 Packages Of 6 Ounce Each)
  Dry sherry 3 Tablespoon
  Corn flake crumbs 1⁄2 Cup (8 tbs)
  Chopped parsley 1 Tablespoon
  Paprika To Taste

Place onions, celery and butter in a 2 casserole dish.
Cover and microwave 2 to 3 minutes or until tender.
Stir in flour until smooth.
Gradually stir in milk, salt, black and cayenne peppers.
Microwave 4 to 5 minutes or until thickened.
Stir every minute.
Add 1 cup cheese and stir until cheese melts.
Toss together shrimp, crabmeat and sherry.
Stir into sauce.
Microwave, uncovered, 7 to 9 minutes [ROASTS, 9 to 11 minutes].
Stir twice during cooking.
Combine remaining 1/2 cup cheese with corn flake crumbs and parsley.
Spoon over top of casserole.
Cover and microwave 1 to 2 minutes [ROASTS, 2 to 3 minutes].
Sprinkle with paprika and let stand 5 minutes before serving.
