Pears Helene

  Freshly squeezed orange juice 1 1⁄4 Cup (20 tbs)
  Pears 2 Large, pared, cored and cut in half
  Semi sweet chocolate bits 6 Ounce (1 Package)
  Salt 1 Dash
  Cream cheese 8 Ounce, softened (1 Package, At Room Temperature)
  Ground walnuts 1⁄3 Cup (5.33 tbs)
  Confectioners sugar 2 Tablespoon
  Grated orange rind 1 Tablespoon

Bring orange juice to a boil in a large saucepan; add pears.
Cover, reduce heat and simmer 20 to 25 minutes, or until pears are tender but hold their shape.
Pour off and set aside l/2 cup orange juice; chill pears.
Melt chocolate over hot (not boiling) water in the top of a double boiler.
Add reserved l/2 cup orange juice and salt; blend until smooth.
Set aside.
Beat cream cheese in a small bowl until smooth; blend in walnuts, confectioner's sugar and orange rind.
Arrange pears in a pool of chocolate sauce in dessert dishes; pipe or spoon cream cheese mixture on top of pears.
