Blender Hollandaise Sauce's picture
  Egg yolks 3
  Lemon juice 2 Teaspoon
  Salt 1⁄2 Teaspoon
  Cayenne pepper 1 Dash
  Sweet butter 1⁄4 Pound

Combine the yolks, lemon juice, salt and cayenne in a blender jar.
Turn the blender on, then quickly off to blend ingredients.
Heat the butter in a pan until bubbly.
Turn the blender on high.
Pour in the hot butter in a slow but steady stream.
As soon as the butter is mixed in, turn the blender off.
To make this sauce in a double boiler, melt the butter over gently simmering water.
Stir the yolks, lemon juice, salt and cayenne together to blend; beat into the melted butter and stir constantly until thickened.
If the sauce curdles, beat in a tablespoon or 2 of hot water.
Serve with asparagus or broccoli, fish or chicken.
