|Potatoes||8 Medium, pared, and thinly sliced|
|Butter/Margarine||1⁄2 Cup (8 tbs)|
Dry potato slices thoroughly with absorbent paper.
Arrange even layers of potatoes in a buttered 2-quart baking dish; overlap slices about 1/4 inch.
Sprinkle each layer with a mixture of salt and pepper and dot with some of the butter and season with parsley.
Bake at 425°F 40 to 60 minutes, or until potatoes are tender and golden brown.
