Cream together 100 g (1/4 lb) soft liver pate with 50 ml (2 fl oz) (1/4 cup) double (heavy) cream.
Mix in a finely chopped dill pickle, some chopped capers and a few drops of chilli sauce.
Place in a piping (decorator's) bag with a star nozzle and pipe into the hollowed brioches.
Replace the topknots of the brioches.
