Mimi's French Cake
|Flour||2 3⁄4 Cup (44 tbs)|
|Baking powder||1 3⁄4 Teaspoon|
|Butter||1 1⁄4 Cup (20 tbs), softened (2 1/2 Sticks)|
|Confectioners sugar||2 1⁄2 Cup (40 tbs)|
|Sugar||1 1⁄2 Cup (24 tbs)|
|Eggs||6 , separated|
|Milk||1 1⁄4 Cup (20 tbs)|
|Vanilla extract||1 Teaspoon|
Sift together the flour and baking powder.
Cream the butter and sugars in a large mixing bowl until light and fluffy.
Add the egg yolks; mix well.
Beat the egg whites in a bowl until stiff peaks form.
Add the flour mixture to the creamed mixture alternately with the milk, mixing well after each addition, beginning and ending with flour mixture.
Stir in the vanilla.
Fold in the stiffly beaten egg whites.
Spoon into a greased 10x14x2 inch cake pan.
Bake at 350 degrees for 40 to 45 minutes or until cake tests done.
Wrap while still warm in a tea towel.
Cool, remove towel and serve.
