French Beef Casserole

Ingredients
  Beef shoulder 1 1⁄2 Pound, cut in 1.50 in. cubes
  Flour 4 1⁄2 Tablespoon
  Butter 2 Tablespoon
  Bacon fat 2 Tablespoon
  Canned tomatoes 1 Pound
  Canned mushrooms 6 Ounce (Big Mushrooms)
  Carrots 1 Pound, cut in 2 in. chunks
  Green peppers 2 , cut in squares
  Sliced celery 1 1⁄2 Cup (24 tbs)
  Instant minced onion 4 Tablespoon
  Dried basil leaves 1 Teaspoon
  Crumbled tarragon 1 Teaspoon
  Salt To Taste
  Pepper To Taste
Directions

Sprinkle meat with salt, pepper and 1 1/2 tablespoons flour in butter and bacon fat.
Put in a casserole.
Put 3 .tablespoons flour in skillet with remaining fat; add juice from tomatoes and mushrooms.
Stir until thickened; pour over the meat.
Add drained tomatoes and cover.
Bake for 1 hour at 325 degrees.
Remove and add vegetables, instant minced onion, basil leaves and tarragon.
Recover; bake for 1 hour longer at 325 degrees.
Cool; add mushrooms.
Refrigerate.
To serve, heat oven to 350 degrees and bake in casserole, covered, for 45 minutes.
