Cheese And Chive Souffle
|Plain flour||1⁄4 Cup (4 tbs)|
|Cayenne pepper||1 Pinch|
|Milk||1 1⁄2 Cup (24 tbs)|
|Grated cheddar cheese||2 Cup (32 tbs)|
|Fresh chives||1 Tablespoon, chopped|
|Eggs||6 , separated|
Place margarine or butter in a large bowl; microwave for 1 minute on HIGH, Add flour and pepper; mix to a paste.
Gradually stir in milk
Cook for 5-6 minutes on HIGH, stirring every 2 minutes.
Add cheese; cook a further 2 minutes on HIGH.
Add chives; mix well.
Preheat oven to 180°C.
Beat egg yolks and stir into cheese mixture; blend well.
Beat egg whites until soft peaks form.
Gently fold egg whites into cheese mixture, half at a time until just blended.
Pour into a greased 2-litre souffle dish.
Bake on Low Rack for 18-20 minutes on LOW MIX/BAKE 180°C or until top is puffed and golden.
