Cheese And Chive Souffle

This cheese and chives souffle is a fairly simple reciepe that can be served as a savory side in a meal or as a dessert. Prepared with grated cheddar cheese combined with flour, butter, milk and eggs, along with chives, the cheese and chives souffle is pepped up with cayenne pepper and baked in a souffle dish. Adapted from Sharp Microwave and Convection Cookbook.
Ingredients
  Margarine/Butter 60 Gram
  Plain flour 1⁄4 Cup (4 tbs)
  Cayenne pepper 1 Pinch
  Milk 1 1⁄2 Cup (24 tbs)
  Grated cheddar cheese 2 Cup (32 tbs)
  Fresh chives 1 Tablespoon, chopped
  Eggs 6 , separated
Directions

Place margarine or butter in a large bowl; microwave for 1 minute on HIGH, Add flour and pepper; mix to a paste.
Gradually stir in milk
Cook for 5-6 minutes on HIGH, stirring every 2 minutes.
Add cheese; cook a further 2 minutes on HIGH.
Add chives; mix well.
Preheat oven to 180°C.
Beat egg yolks and stir into cheese mixture; blend well.
Cool slightly.
Beat egg whites until soft peaks form.
Gently fold egg whites into cheese mixture, half at a time until just blended.
Pour into a greased 2-litre souffle dish.
Bake on Low Rack for 18-20 minutes on LOW MIX/BAKE 180°C or until top is puffed and golden.
Serve immediately.
