Orange Crepes Flambe
|Sugar||1⁄4 Cup (4 tbs)|
|Lemon juice||1 1⁄2 Tablespoon|
|Grated lemon peel||1 Teaspoon|
|Orange juice concentrate||1⁄4 Cup (4 tbs), thawed and undiluted|
|Toasted sliced almonds/Chocolate curls from 1 ounce semi sweet chocolate||2 Tablespoon|
|Strawberries||1 1⁄2 Cup (24 tbs), garnish|
First prepare crepes.
Fold crepes in half and then in half again, forming triangles; set aside.
Place butter, sugar, lemon juice, lemon peel, and orange juice concentrate in a large frying pan and heat together, stirring, until blended.
Arrange crepes overlapping in the pan and heat through.
Warm brandy, ignite, and spoon, flaming, over the crepes.
Place 2 crepes on each dessert plate and scatter the nuts or chocolate curls over them.
Garnish with berries, if desired.
