Green Pea And Spinach Souffle

Ingredients
  Frozen petite peas 10 Ounce, cooked
  Yogurt 3⁄4 Cup (12 tbs)
  Chopped shallots 2 Tablespoon
  Chopped fresh spinach 1 Cup (16 tbs)
  Dried marjoram 1⁄2 Tablespoon, crumbled
  Parsley 2 Tablespoon
  Eggs 2 , separated
  Egg whites 4
  Salt 1 Teaspoon
  Cornstarch 2 Tablespoon
  Grated parmesan cheese 1 Tablespoon
Directions

Puree peas in a blender with yogurt, shallots, spinach, marjoram, parsley, and egg yolks.
Beat the 6 egg whites until foamy, add salt and cornstarch and beat until stiff.
Fold in pea puree.
Turn into a greased 1 1/2 quart souffle dish.
Sprinkle with cheese.
Bake in a 325° oven for 30 to 35 minutes or until set.
Contains about 100 calories per serving.
