Sweet Potato Souffle
|Ground cinnamon||1 Tablespoon|
|Finely grated orange peel||1 Tablespoon|
|Cooked mashed sweet potatoes||2 Cup (32 tbs)|
Beat egg whites until they form soft peaks.
Gently fold egg whites, cinnamon, and orange peel into mashed sweet potatoes.
Fill four individual souffle dishes with the sweet potato mixture.
Bake for 25 minutes and serve at once.
