French Hot Chocolate
|Unsweetened chocolate square||4 Ounce|
|Water||1⁄4 Cup (4 tbs)|
|Milk||4 Cup (64 tbs)|
|Half and half||1⁄2 Cup (8 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Ground mace||1⁄4 Teaspoon|
|Ground allspice||1⁄8 Teaspoon|
|Vanilla extract||1 Teaspoon|
|Almond extract||1⁄2 Teaspoon|
|Ground nutmeg||1⁄8 Teaspoon|
|Whipping cream||1⁄2 Cup (8 tbs), whipped|
Combine chocolate and water in a heavy saucepan, stir over low heat until chocolate melts.
Gradually add milk, half-and-half, sugar, salt, mace, and allspice.
Cook over medium heat, stirring with a wire whisk, until mixture is hot.
Stir in vanilla and almond flavorings.
Pour into cups.
Fold nutmeg into whipped cream.
Top each cup with whipped cream.
