Peel pears, and cut a thin slice from bottoms so pears stand upright.
Combine water, sugar, and vanilla in a Dutch oven; bring to a boil over medium heat, stirring until sugar dissolves.
Add pears; cover, reduce heat, and simmer 25 minutes or until pears are tender but still hold their shape.
Let pears cool in sugar mixture.
To serve, drain pears well, and spoon into individual dessert dishes.
Top pears with Chocolate-Orange Sauce.
