Spinach And Cottage Cheese Souffle

Ingredients
  Frozen chopped spinach 10 Ounce
  Corn oil 1⁄2 Cup (8 tbs)
  Green onions 4 , sliced
  Eggs 6
  Flour 2 Tablespoon
  Small curd cottage cheese 1 Pound
  Cheddar cheese 1⁄2 Pound, grated
Directions

Thaw the spinach and squeeze out all excess water.
Set aside.
Heat the oil in a pan and saute the onions until translucent.
Add the spinach and saute ten minutes more.
Meanwhile, beat the eggs well and stir in the flour and cottage cheese until well blended.
Combine with the spinach mixture, mixing well.
Pour into a greased souffle dish.
Sprinkle with the grated cheese.
Bake at 350 degrees for about thirty to forty minutes.
Be careful not to overbake the souffle.
It should feel soft to the touch
