Classic French Bean Salad

Ingredients
  French beans 2 Pound, topped and tailed
  Garlic 1 Clove (5 gm), peeled and lightly crushed
  Green olive oil 4 Teaspoon
  Lemon juice 1 1⁄2 Tablespoon
  Salt To Taste
  Tomatoes 750 Gram, skinned and sliced (1.5 Pound)
  Onion 2 Medium, peeled sliced and separated into rings
  Black pepper 1
  Wine vinegar 2 Teaspoon
  Oregano/Marjoram / basil 1 Tablespoon
Directions

1. Trim the beans to equal lengths. Steam for about 8-10 minutes until just tender, then pour the water out of the saucepan below the steamer and put the beans immediately into the hot pan, adding the garlic clove, 2 teaspoons of the oil, the lemon juice and a sprinkling of salt. Replace the lid; shake well and set aside to cool.
2. When the beans are completely cold, discard the garlic and assemble the salad on a large flat platter. Starting at one end, arrange a row of beans, then a row of tomato, a row of onion on top of the tomatoes, then beans again, and so on.
3. Sprinkle everything lightly with salt and pepper and drizzle the remaining oil and the vinegar over the tomatoes and onions only. Sprinkle the platter with chopped oregano and serve.
