Duckling A L'Orange
|Onion||1 Small, quartered|
|Orange sauce||2 Tablespoon|
Rinse duckling thoroughly in cool water; pat dry.
Sprinkle cavity with salt and pepper.
Set onion and celery leaves inside cavity.
Tie legs and wings together with string.
Pierce skin around leg and wing joints with fork.
Arrange duckling, breast-side down, on micro-wave roasting rack in microproof baking dish.
Place in oven and cook on HI, 20 minutes.
Remove from oven.
Pour off excess fat.
Turn duckling over and pierce entire surface with fork to allow fat to drain.
Insert probe in breast close to leg without touching bone.
Plug in probe.
Cook on 70 with temperature probe set at 170Â°F.
Serve with Orange Sauce.
