|Blanched almonds||2 Cup (32 tbs), ground (Around 0.5 Pound)|
|Confectioner's sugar||2 1⁄2 Cup (40 tbs)|
|Chopped citron||1 Tablespoon|
|Chopped candied orange peel||1 Tablespoon|
|Grated lemon rind||1 Teaspoon|
|Lemon juice||1 Tablespoon|
In a large bowl mix cereal, ground almonds, confectioners' sugar, citron, orange peel, lemon rind, salt, vanilla, and lemon juice, blending thoroughly.
Beat egg whites until soft peaks will form.
Fold in cereal-fruit mixture.
Shape into mounds with a tablespoon and place on heavy paper on baking sheet.
Bake in moderate oven (375Â°F.) 15 to 18 minutes, or until golden brown.
Remove from paper at once.
