Seafood Souffle Salad

Ingredients
  Lemon flavored gelatin 3 Ounce
  Lemon juice 1 Tablespoon
  Mayonnaise/Salad dressing 1⁄2 Cup (8 tbs)
  Diced peeled avocado 1 Cup (16 tbs)
  Diced shelled cooked shrimp 3⁄4 Cup (12 tbs)
  Diced celery 1⁄4 Cup (4 tbs)
  Chopped onion 1 Tablespoon
Directions

Dissolve gelatin and 1/4 teaspoon salt in 1 cup boiling water.
Stir in 1/2 cup cold water and the lemon juice.
Gradually beat gelatin mixture into mayonnaise till smooth.
Chill till partially set.
Beat till fluffy.
Fold in avocado, shrimp, celery, and onion.
Chill again till mixture mounds when spooned.
Turn into 4-cup mold; chill till firm.
