Cauliflower-Cheese Souffle

Ingredients
  Butter 3 Tablespoon
  Flour 3 Tablespoon
  Hot milk 1 1⁄4 Cup (20 tbs)
  Salt 1⁄2 Teaspoon
  Cayenne 1 Dash
  Nutmeg 1 Dash
  Egg yolks 4
  Grated swiss cheese 3⁄4 Cup (12 tbs)
  Chopped cooked cauliflower 1 Cup (16 tbs)
  Egg whites 5
Directions

Heat oven to 350 degrees.
Put a pan of hot water in oven (have water about 1 inch deep).
Butter a 2-qt. casserole or souffle dish.
Melt butter in medium saucepan.
Stir in flour and cook gently, stirring, just until flour begins to get golden.
Stir in hot milk and cook and stir 5 minutes, until very thick and smooth.
Stir in salt, cayenne and nutmeg.Beat egg yolks until thick and lemon colored.
Stir in about half of hot mixture gradually then pour egg yolk mixture back into saucepan.
Stir to blend.
Remove from heat and stir in cheese and cauliflower.
Beat egg whites until stiff and fold into hot mixture.
Pour into prepared baking dish.
Set in pan of hot water in oven.
Bake about 50 minutes or until set and browned.
Serve immediately.
