Fresh Peach Crepes

  Cream cheese 16 Ounce
  Sugar 1⁄2 Cup (8 tbs)
  Vanilla extract 2 Teaspoon
  Crepes 8
  Peaches 6 Large
  Butter/Margarine 1⁄2 Cup (8 tbs)
  Firmly packed light brown sugar 1⁄2 Cup (8 tbs)
  Whipping cream 1 Cup (16 tbs)
  Powdered sugar 2 Tablespoon

Combine cream cheese, 1/2 cup sugar, and vanilla; beat until smooth.
Spread about 3 tablespoons of cream cheese mixture over each crepe.
Place a row of peach slices down the center of each crepe, reserving enough slices for garnish.
Dot peaches in each crepe with 1 tablespoon butter, and sprinkle with 1 tablespoon brown sugar.
Roll up crepes, and place in a 13- x 9- x 2-inch baking dish; bake at 325° for 8 to 10 minutes.
Combine whipping cream and powdered sugar; beat until stiff peaks form.
Place crepes on serving dishes; garnish with whipped cream and peach slices.
Serve immediately.
