|Soft butter/Margarine||1⁄2 Cup (8 tbs)|
Soak potatoes in ice-cold water, drain and dry well on towel.
Season with salt and pepper.
Butter round baking dish (6-cup size), and line bottom and sides with potato slices.
Arrange layer of potatoes, and dot liberally with butter or margarine; repeat until all potatoes are used up, saving some butter or margarine for top.
Bake at 425°F. 45-50 minutes or until potatoes are tender when tested with toothpick.
To serve, invert baking dish on hot platter so that potatoes slip out in molded form, brown and crusty.
Garnish with parsley.
