Creamy Cheese Souffle
|Milk||1 Cup (16 tbs)|
|Grated sharp cheese||3⁄4 Cup (12 tbs)|
Melt butter or margarine in saucepan; add flour, and cook until mixture is bubbling.
Remove from heat, and add milk all at once.
Return to heat and cook, stirring constantly, until thick and smooth.
Allow to cool slightly; then beat in egg yolks with seasonings.
Beat egg whites until stiff but not dry; lightly fold 2 mixtures together with grated cheese.
Pile lightly into buttered 1 1/2-quart souffle dish, and bake at 350°F. about 45 minutes or until souffle is well puffed and firm.
Serve at once.
