This one's an epic, for us. But it's still fast and easy and perfect for a weeknight meal. Ratatouille isn't just a cartoon. But you knew that, right?
1 Large, dice
Bell pepper pieces
1 Large, slice
3 Medium, slice
Red wine vinegar
1. Scrap the eggplant and place it in the microwave for 8 minute, flip it over and cook it for 8 more minute, once done keep it aside.
2. Sauté the onion with olive oil in a hot pan for few minute, once the onion are soft remove and keep it aside. Add some olive oil in the same pan and sauté the zucchini for 8 minute or until soft.
3. Once the zucchini is soft add the tomatoes, onion and mix well.
4. Start cutting the eggplant into bite size pieces and add that in the pan along with the bell peppers, season with salt, pepper, garlic powder, fresh oregano and finally red wine vinegar.
