Mirepoix

The mirepoix is the base for a variety of meat, fish or vegetable dishes: making a perfect soffritto is very easy!
Ingredients
  Carrots 1 Medium, dice
  Celery stalk 1 Medium, dice
  Onion 1 Large, dice
  White wine/Water 50 Milliliter
  Extra virgin olive oil To Taste
Directions

GETTING READY
1. Peel and cut the onion, carrots & celery stalk into small dices and keep it aside.

MAKING
2. Heat the extra virgin olive oil in a pan, then add the diced vegetables; sauté on a low flame for at least 15 minutes, until the onion is transparent.
3. The mirepoix is ready. After dicing the vegetables, you can pat them dry with a cloth and freeze in a freezer bag.

SERVING
4. Use as needed.
TIPS
You can reduce the cooking time by adding white wine or water.
