Water | 1/2 Cup (8 tbs) | |

GETTING READY
1. Preheat oven to 355 degree F.
2. Grease four ¾ cup capacity ramekins with butter. Dust with sugar, and place them on baking tray.
MAKING
3. In a saucepan combine water, sugar, and cream of tartar. Place it over high heat, and bring it to a boil. Don’t stir. Cook for 6-8 minutes or until light golden. Remove from heat and allow it to cool slightly.
4. In a mixing bowl, place egg whites, and beat until soft peaks form.
5. Gradually add sugar mixture, and blend until thick and glossy.
6. Pour mixture equally into the ramekins. Pop it in oven, and bake for 10 minutes or until puffed and golden.
SERVING
7. Serve caramel souffle immediately.
