Galette Du Roi

Traditionally served all the month of January in France, this Galette du Roi or Cake of Kings has a surprise "favor" inside and whoever gets the favor is crowned king or queen for the day! When my kids were little I would make this light and not too sweet treat all year round and put enough favors inside so that we had a veritable royal family. While I made the cake, I'd send the children off to make and color their own crowns; that way I could also hide the favors without them watching. The favors in France are tiny porcelain figurines but a dried bean works just as well!
Ingredients
  Egg yolk 1
  Puff pastry sheet 2
  Almond meal 1 Cup (16 tbs)
  Sugar 1 Cup (16 tbs)
  Eggs 2 Medium
  Softened butter 1 Cup (16 tbs)
  Vanilla 1 Teaspoon
Directions

GETTING READY
1.Preheat the oven to 400°F.

MAKING
2.place the pastry sheet on a floured board and cut each sheet into a circle.
3.Place a pastry sheet on a parchment paper lined baking sheet and make number of holes with a fork.
4.In a large bowl mix almond meal, sugar, eggs, butter, and vanilla.
5.Spread this mixture over bottom pastry leaving the outer edge without filling.
6.Place the “favor” in the filling close to the outer edge.
7.Top with second pastry circle, seal the edges by pressing them together with a fork.
8. Make little crossings and tiny holes on top with a fork to let any steam escape during baking.
8.Brush with an egg yolk diluted with little water.
9.Bake for about 30-35 minutes until golden brown.

SERVING
10.Cut it into pieces and serve it as a sweet treat to the kids.
