French Potato Pancakes
|Pepper||1 Pinch (as required)|
|Nutmeg||1 Pinch (as required)|
|Parsley||1⁄2 Teaspoon, chopped|
|Eggs||2 , separated|
|Butter||1 Tablespoon (as required)|
Peel and grate potatoes and onion.
Combine potatoes, onion and flour with seasonings and parsley; blend well.
Beat egg yolks slightly; stir into potato mixture.
Beat egg whites until stiff peaks form; fold into potato mixture.
Drop by tablespoonfuls onto greased hot griddle; cook on both sides until lightly browned.
