French Potato Pancakes

Ingredients
  Potatoes 2 Large
  Onion 1 Medium
  Flour 2 Tablespoon
  Salt 1⁄4 Teaspoon
  Pepper 1 Pinch (as required)
  Nutmeg 1 Pinch (as required)
  Parsley 1⁄2 Teaspoon, chopped
  Eggs 2 , separated
  Butter 1 Tablespoon (as required)
Directions

Peel and grate potatoes and onion.
Combine potatoes, onion and flour with seasonings and parsley; blend well.
Beat egg yolks slightly; stir into potato mixture.
Beat egg whites until stiff peaks form; fold into potato mixture.
Drop by tablespoonfuls onto greased hot griddle; cook on both sides until lightly browned.
